Baking Instructions
For the cupcakes you will need:
2 large eggs at room temperature, ½ cup
vegetable oil, ½ cup buttermilk.
For the frosting you will need: 4 oz cream cheese and 3 tablespoons unsalted butter (at
room temperature), 1 ¼ cup powdered sugar, ½ cup crystallized ginger and 1
teaspoon lemon juice (optional).
Cupcakes
Preheat oven to 325 degrees. Mix
eggs, oil and buttermilk until all ingredients are incorporated. Slowly add
cupcake mix to liquid, mix completely, scraping sides as needed, until all dry
mix is incorporated.
Spoon batter into a greased muffin
pan (or use paper muffin cups), filling ¾ full. Bake for 20-25 minutes (test by
inserting toothpick–its done if it comes out clean). Remove from oven and allow
to cool completely before adding frosting.
Frosting
Place powdered sugar, butter,
cream cheese and lemon juice in bowl and mix until smooth. Spread frosting on
cupcakes and sprinkle with ginger.
