Coconut Lime Bars


Yields 12 coconut lime bars


Preheat oven to 350 (325 degrees if using convection oven).


Ingredients


For Base

1 package Iveta Vanilla Cupcake Mix

1/2 cup shredded coconut

8 tbsp room temperature butter


For Top

Zest of 4 limes (less if limes are large)

3/4 cup lime juice

6 eggs

2 cups sugar

2 tbsp flour

1/4 cup shredded coconut for garnish (optional)


Directions for Base

Mix all ingredients for the base in an electric mixer and mix until well combined.


Place the mixed ingredients in a prepared 9 x 13 sheet pan, evenly coatin the base of the pan (use your hands to press down base to the pan).


Bake for 10-12 minutes or until the base is slightly golden brown.


Directions for Top

While the Base is in the oven, start zesting the limes.


In a medium bowl whisk together the zest, lime juice and eggs.


Add the sugar and whisk some more until well combined.


With the flour and 1/3 cup of the lime mixture, make a rue, whisking to avoid lumps.


Whisk rue back into lime mixture, then pour over Base and put pan back into oven.


Important

After 5 minutes in the oven rotate the pan 180 degrees, then finish baking for 16-20 minutes or until the edges start to brown.
