Yields 12 pumpkin bars
Preheat oven to 350 (325 degrees if using convection oven).
For Cake Batter
1 package Iveta Vanilla Cupcake Mix
6 tbsp melted butter
1 8oz package cream cheese, softened
1 15 oz can pumpkin puree
1 tsp vanilla
8 tbsp melted butter
2 cups powdered sugar
1 tsp cinnamon
1 tsp nutmeg
Directions for Cake Batter
Combine the cupcake mix, egg and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 x 9 inch baking pan.
Directions for Filling
In a large bowl beat the cream cheese and pumpkin until smooth.
Add the eggs, vanilla and butter and beat together.
Next add the powdered sugar, cinnamon and nutmeg and mix well.
Spread the pumpkin mix over the cake batter and bake for 35 to 40 minutes. Check after 35 minutes to make sure not over bake them. The center should be a little giggly.
Remove from oven and let the pan cool completely before cutting. Dust lightly with powdered sugar before serving.
