Cashew Cream

Cashew cream is an excellent substitute for heavy whipping cream and works perfectly with all Iveta Gourmet scone mixes. For anyone who cannot or chooses not to use dairy, cashew cream is the perfect solution.

Makes approximately 1-1/4 cups of "cream."


˝ cup raw cashews

˝ cup water

1 teaspoon honey or agave* (optional)


Soak cashews in water for at least 2 hours. This softens them and also activates healthy enzymes that makes them more nutritious.

Place in a food processor or blender, and blend until smooth.

*Add sweetening if desired.
